Turn on oven to 400 degrees.
Place pork rinds into a food processor to make "bread crumbs". A food processor works best, but if you don't have one you can place the pork rinds in a bag and break them down as much as you can.
Mince parsley
Add first 6 ingredients.
Next, add salt and pepper. I just use my grinder and keep going until it "looks good". I think salt and pepper is personal preference so I don't like to make specifics, but if I had to guess it's about 1 Tsp each. Mix together.
Add in the egg, and splash of milk. Mix together.
I prefer to mix the other ingredients well first. Then add in the turkey meat last and mix until combined, be careful not to over mix.
Form into 1oz meatballs and place on baking sheet.
Cook in the oven for 25 minutes, and turn the oven on broil for the last 5 minutes.
